Hello Puddin' Grain Free Granola
Shut up and take my money - this is the best (and easiest) grain-free granola you will ever have. It NEVER lasts in my house. I’ve shared with friends and family and have been warned to not bring it again because it's binge worthy.
I’m keto-ish so I’m not afraid of some good fats. I’ve longed for a delish farmer’s market granola since going/staying keto. Let me tell ya, this is the bomb and it's filling. It goes great on some Hello Puddin’ Chia Pudding, on ice cream, or just by itself as a healthy snack.
Gluten Free - High in Fiber - Keto Friendly - Vegetarian - Easy
- 1 HP Dark Chocolate w/ Reishi Chia Pudding
- 3 tbsp coconut oil
- 3 tbsp or more to taste, farmers market honey (or a nice unfiltered honey from the store)
- 1 tsp of Redmonds Salt (any sea salt will work but this is my fave)
(using the empty puddin' cup measure out the following)
- Coconut shavings (unsweetened)
- Pumpkin Seeds
- Almond Shavings
(any of these can be easily subbed with other nuts and seed to your preference)
In a large bowl mix nuts, seeds, and chia pudding. I used my chia pudding cup to help measure because I despise dishes :). In a separate bowl, melt the coconut oil and honey together. Watch carefully as not to burn. Mine took less than 60 seconds to liquefy. Stir these the best you can to mix. Pour oil/honey mixture over your nuts and seeds and stir vigorously so that it all coats evenly. Salt to taste.
Pour on a cookie sheet lined with parchment paper. Make sure you spread it out evenly. Salt to taste (I usually have a heavy hand with salt). Cook at 300 degrees for 10 min. Stir and move around granola so it cooks evenly. Continue to cook for another 10-15 min. Mixture should be lightly toasted but not burned.
Take out and let it cool for at least 10 min. It will be hot-hot-hot so be careful. My husband has plenty of tongue burns to testify it pays to wait!
